How To make Butterfly Shrimp

img_9166My new favorite way to eat shrimp is to butterfly them. The pictures pretty much speak for themselves. Cut all the way through right before it seems like you are about to split it. I clean out anything I see black, vein-y or slimy. Then all I do is add Himalayan Pink Salt and Pepper. Then I turn the pot on high, add butter and lay them down meat facing the grill. Then after they’re done while still on the fire I squeeze lemon on top. That’s it. I can eat like ten of these. I sometimes make it with a baked potato and a salad or just plain, it’s up to you. img_9609 There are people and things in my life that I have lost. I never knew how important those things were to me until they disappeared.  

This is why I focus more on day-to-day moments, rather than the past or my future. Of course be smart and save and plan for your future, but I’m saying this to say, at all cost do whatever it is that you have to do to be your best, and your happiest. This is why it’s important to live in the present so we can enjoy and reflect on the daily treasures life can bring. When we focus on the now we can also do fine tuning when needed, whether that is eliminating or adding certain things to our lives.  If we appreciated what we had there would be no room for sorrow, (why) because we would have valued it right?

Focus and be grateful for the things and the people around you. Make yourself happy and remember to always be kind even when it’s hard. If we try to live like this we will always be on the winning side. img_9422 This past week has been one of the hardest weeks for me. I’ve been fighting with my gut instinct for quite some time. Being faced with life changing decisions tends to weigh heavy on you mentally, emotionally, and physically. After much prayer and meditation, I realized that it was fear of change that made me most uncomfortable.

There may be things in your life that hinder your growth. Every THING is not permanent.  Things come into your life for reasons, seasons, and lifetimes. Maybe it’s time to reevaluate. Take inventory of the things that surround you. If they no longer serve a positive purpose in your life, or are keeping you from reaching your highest potential, it’s ok to let it go.

Ask yourself…are you happy? Or are you just comfortable? Tips on what to do and where to stay in Hawaii, Maui coming from someone that’s been there 19 times.

See Hawaii through my eyes. I like to have everything I need. This time I stayed for eight days and wish I could have stayed longer. 

We stayed at the Andez. This is our second time there. The one complaint I have is that the room service sucks. When you are drinking you need a good burger, french fries or something hearty. Other than that the resort is amazing. We stayed in the premium suite in case you were wondering. They only have two on the entire resort so book ahead. I wanted to have extra space for my family to move around and be comfortable, especially on a vacation that long. Me and my youngest stayed at the pool all day everyday.

I’ve been to about 5 different resorts in Maui and this is one of the most beautiful as far as scenery.

The Ritz Carlton is great and have the best sunsets on that side of the island it just gets windy over there and they don’t have a private adult pool which is a must for me when vacationing without my kids. No offense to the kids;). Plus it’s far from all the main attractions so I’d suggest you stay in Waliea. That’s the better side of the island, but that’s just my opinion.

I stayed at the Grand Waliea and they pool is amazing. It’s just no view of the ocean while you are swimming. They rooms are far back so the ocean veiws aren’t as good as the Andez and the Four Seasons.

The Four Seasons is super plush! Great view it’s really small and intimate if that’s what you’re looking for.
