I had the busiest most craziest weekend ever. It was the type of weekend that made me stop and think how devastated I’d be if I were to lose someone I love. To top that off I drop my 7 year old daughter off at school and there is a police officer at the gate. I felt that she would be safer, but is this really what the world has come too. This is why I’ve started cherishing each day and each moment and living my life the way I see fit. Enjoy your day.

For New Year’s Eve instead of buying a new dress just to say I wore a new dress, I pulled this vintage dress out, dusted it off and it felt like new.

My Version. Belizean Salbutes

Tortillas                 Toppings                                                                                                           Salsa

Masa                         2 Chicken breasts, poached, skin removed and shredded                       Onions

Season salt               Season salt, cumin, pepper, paprika, salt, garlic powder                         Cilantro

Paprika                                                                                                                                             Tomatoes

Vegetable oil                                                                                                                       

Season generously…

Season water with salt. Place chicken in water and boil with garlic cloves, onions, bell peppers. 

Next you make your fresh salsa. Cilantro, onions and tomatoes with a dash of salt and pepper…

Season your masa with season salt and paprika and let sit for 5 minutes. Next, pinch off pieces of dough to make 1 inch balls. 

Next get your tortilla presser and cut a zip lock bag in half so the masa wont stick to the presser, flatten them into about 4 inches in diameter….

Cook the masa in the pan with oil on high heat for 25 to 30 seconds a side, turning once. Fry each tortilla until it puffs, about 1 minute. Drain after.
Top the masa with the chicken, salsa and a little hot sauce and  there you have it, Salbutes!

Merry Christmas

Every Christmas I normally cook, but this year I decided to switch things up. I made a small dinner (no leftovers) Christmas Eve, and went out to dinner Christmas night. This was the first time I did this and it was quite a treat. I enjoyed myself and didn’t have the big clean up like I normally do. I think this might be our new tradition.

 Sometimes I’m brave when I’m scared,

I love life because  I’ve lost someone that was important to  me and was left alone,

I have compassion because when everyone else judged me, someone showed me compassion and that’s what got me through,

I forgive because my mom forgave me when I disappointed her,

I love unconditionally because that’s how God loves me even though I sometimes neglect Him…

realMy husband has been practicing on being more spontaneous. He’s good at surprising me with gifts, but what he’s  not real good with is being free. Well that has changed. He came home and said we are going to a Christmas party last night. I jumped up with joy, threw this on and had a great time among the crowd with my husband.
