shrimp fried rice

 Ingredients:

  • 1 cup uncooked rice
  • 5 tablespoons  butter
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 2/3 cup chopped scallions (I used green onions)
  • 3 tablespoons sesame seeds
  • 5 eggs
  • 5 tablespoons soy sauce
  • salt
  • pepper
  • sesame seeds
  • soy sauce
  • two cloves of finely minced garlic

First make rice. Next cook carrots and onions together in pan with butter and oil. Sauté until carrots are translucent then put into container to the side. Scramble eggs and fry and set to the side. Cook shrimp with green onions in butter and set to the side. Put sesame seeds in dry pan and warm til slightly brown shaking pan occasionally for even color then set aside. Add all your ingredients to rice including soy sauce, butter, salt and pepper to taste. I then add green onions in at the end and mix in. It’s a lot of work but well worth it.

I’ve noticed animals and children love me…

Yesterday’s heat was sooo over the top it was unbelievable. On days like this if you have on fussy clothing you want to just scream, so I opted to throw on my sandals and bathing suit, hang out with my family including my little brother and god daughters and head towards the breeze. I made homemade sandwiches, caught up on my magazines, watched my husband relax (finally), played in the sand and talk to my brother about the college he will be attending this fall.  I even got a nap in. I find my self only wanting to take pics when I’m planning to, but lately I’ve just been snapping in  hopes of getting that unexpected shot. This will allow me to update a little more. Everything doesn’t have to be perfectly planned right?

Bitterness

I’ve seen bitterness and resentment in people and I’ve chose to overlook that in them because we are all dealing with something one way or another. I’ve always chosen to focus on the good in them, but ultimately these kinds of people aren’t happy within which allows them to be angry all the time so it’s best to just keep away if you can.

I should have known…

me timeSometimes I get so caught up in work, family and helping others that I forget to have me time.  Just me myself and I time to clear my mind. This is really needed, but most of the time I end up feeling like I’m away from my family and I start to feel guilty and end up not doing something for myself.

Communicating is key in any relationship. Without communication things can go from 0 to 100. In the past I didn’t communicate well with others and things would get blown out of proportion that really shouldn’t have. Sometimes we misinterpret what the other party is saying and if it’s bothering you it’s best to discuss your feelings instead of holding it in. You’ll find most times that things can easily be cleared up when you just convey them.

As I’ve gotten older and as I’ve experienced more in life I’ve learned that communication is essential. Simply put if you communicate you never leave things open for misinterpretation.

Can you look into a person’s eyes even if they are smiling and notice their pain? Do you have to guts to take the time out to ask that individual are they ok and give them a little motivation? Well this is a gift that I’ve realized that I have a couple of weeks ago. I find myself wanting to encourage others in believing that the things that are bothering us deep down inside could be worked out if you just always think positive, learn from it and believe that things will get better.

Everyone is battling something one way or another, know that there is someone bigger than us with a great plan for our lives so if we just always think first, do good and respond with our hearts everything always works themselves out…

To speak or not to speak

To speak or not to speak

If something is bothering you are you suppose to hold it in because you’re scared it might cause a problem? Or on the flip side should you take a chance and say what’s on your mind in hopes that communication is key and the other party will listen and understand.

Most of the time I hold things in and deal with it accordingly, but that’s not always good. I can’t seem to win because when you decide to speak up and say what’s on your mind it creates a problem . What’s a person to do? It’s just Life…

Lately I’ve came to the conclusion that others will take offense when your aren’t there to support them, but excuses always come about when it’s time to return the favor.

I had an extremely busy weekend. I thank God for all my family and friends that are always there for me no matter what. No excuses…

When someone does something to you whether it be your ex-boyfriend, your friend, a co-worker retaliation is never the route to take. I encounter a lot of people in my profession and most of them tell me the classic story of someone hurting them. They then proceed to tell me how they will do something to hurt that person (example) like try and get them fired, call child services on them, key their car and all the while they don’t realize that they are becoming just as evil as the person that hurt them.

People come to me for advice (I’m no expert), but I try to do right by everyone (I advise them this as well) even the people that do me wrong. There is no point in trying to hurt that person or wish bad things upon them because they are miserable in the first place. Also I like to give others the benefit of the doubt and sign it off as they are going through something and they are taking it out on me so that helps me process things when I’m feeling attacked. You’ll be surprised most of the people that have done something to you (when you leave them to God) they come around and apologize for acting that way. Also your conscience is clear because you didn’t counterattack. Just keep smiling and putting positive energy everywhere you go…things will always turn out great for you in the end…
